Sweet Potato & Black Bean Breakfast Burrito

The breakfast burrito contains a blend of complex carbs and plant-based protein that offer steady energy, while healthy fats support brain function and absorption of key vitamins. Definitely a solid go-to for mornings when you want something filling and nutritious without a lot of fuss. 

Ingredients:

  • 1 medium sweet potato
  • 1 cup black beans
  • 3 large eggs
  • 1 avocado
  • 1 cup shredded cheese 
  • 2 large whole-wheat tortillas
  • Olive oil or butter for cooking
  • Optional toppings: salsa, guacamole, sour cream

Method: 

  1. Heat a skillet over medium heat and add the olive oil. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-12 minutes or until tender, stirring occasionally.
  2. Once the sweet potatoes are cooked, add the black beans to the skillet. Stir and cook for another 2-3 minutes until the beans are warmed through. Set aside.
  3. In a separate pan, scramble the eggs until just cooked, adding a pinch of salt to taste.
  4. Place one tortilla in a large skillet over medium heat. Sprinkle half of the cheese onto the tortilla, then layer with the sweet potato and black bean mixture, scrambled eggs, and avocado. Top with the remaining cheese and cover with the second tortilla.
  5. Cook for 3-4 minutes, pressing down gently with a spatula until the bottom tortilla is golden brown and the cheese is melting. Carefully flip and cook the other side for another 2-3 minutes until it’s golden and everything is warmed through.
  6. Slice the quesadilla into wedges and serve with your favourite toppings, like salsa, guacamole, or sour cream.
