Ingredients

  • 1 ½ cups (190g) plain flour

  • 1 cup (200g) caster sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • 3 large eggs (room temperature)

  • ½ cup (120ml) milk (or dairy-free alternative)

  • ⅓ cup (80ml) freshly squeezed lemon juice

  • Zest of 2 large lemons

  • 1 tsp vanilla extract

  • Icing sugar, for dusting

  • Greek yoghurt or vanilla ice cream to serve

Method

1. Prep the tin: Preheat your oven to 175°C (350°F). Grease and line a 20cm (8-inch) round cake tin.

2. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Set aside.

3. Combine wet ingredients: In a separate bowl, whisk eggs, olive oil, milk, lemon juice, lemon zest, and vanilla. Whisk until smooth.

4. Bring it together: Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined, but don’t overmix or you’ll lose that beautiful tender crumb.
