Ingredients:

  • 1 ripe banana

  • 1 tbsp coconut oil or butter

  • 1 tbsp honey or maple syrup

  • ½ tsp cinnamon

  • 1 cup Greek yogurt or kefir yogurt

  • ½ cup granola

  • 1 tbsp chopped nuts (walnuts or almonds, optional)

  • 1 tsp chia seeds (optional)

Method:

  1. Caramelise the bananas: Heat coconut oil or butter in a pan over medium heat. Add banana slices, drizzle with honey or maple syrup, and sprinkle with cinnamon. Cook for 2-3 minutes per side until golden and caramelized. Remove from heat and let cool slightly.

  2. Assemble the parfait: In a glass or bowl, layer Greek yogurt, granola, and caramelized bananas. Repeat layers as desired.
