It’s a meal that looks impressive but is surprisingly easy to prepare (most of the work is done in the oven while you relax with family and friends). Plus, the leftovers (if you have any!) can be turned into quick, delicious meals for days to come.
Ingredients for the Ham:
- 1 fully cooked ham (bone-in or boneless, 4-5 kg)
- 1/2 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- Whole cloves
Ingredients for the Slaw:
- 2 cups shredded red cabbage
- 2 cups shredded green cabbage
- 1 large carrot, julienned
- 1 ripe mango, thinly sliced
- 1/2 cup fresh coriander (cilantro), chopped
- 1/4 cup toasted almonds or cashews
For the Dressing:
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Method:
- Preheat the oven to 180°. Score the skin of the ham in a diamond pattern and, if using, press cloves into the corners for decoration.
- In a saucepan over medium heat, combine honey, mustard, brown sugar, and apple cider vinegar. Stir until thick and glossy (about 5 minutes).
- Brush half the glaze over the ham. Place the ham in a large roasting pan and bake for 1.5–2 hours, basting with remaining glaze every 30 minutes, until golden and caramelized.
- Let the ham rest for 15 minutes, then slice and serve warm or chilled.
- In the meantime, make the dressing. In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper. Adjust seasoning as needed.
- Toss the cabbage, carrot, mango, and coriander in a large bowl. Drizzle the dressing over the top and mix gently.
- Sprinkle toasted nuts on top for extra crunch just before serving.
