Ingredients for 4 people:

  • 250g fenugreek leaves
  • 1 onion
  • 2 cloves garlic
  • 1 medium potato
  • 1 litre vegetable broth
  • 100ml heavy cream
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

For the crispy herb topping:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary leaves
  • Salt and pepper to taste

Method:

  • Heat some olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until soft and fragrant.
  • Add the diced potato and chopped fenugreek leaves to the pot, and cook for another 5 minutes.
  • Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
