Lemon & Garlic Orzo

Ingredients:

  • 1 cup orzo pasta

  • 2 tablespoons olive oil

  • 3 cloves garlic

  • Zest and juice of 1 large lemon

  • 4 cups fresh spinach

  • 1/3 cup sliced almonds

  • Salt and pepper, to taste

  • 1/4 cup grated Parmesan cheese 

  • 2 tablespoons fresh parsley or basil

Method:

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

  3. Stir in the lemon zest and juice, allowing the flavours to meld for about 30 seconds.

  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes.

  5. Toss in the cooked orzo, mixing well to coat the pasta with the lemon-garlic mixture. Season with salt and pepper to taste.

  6. Remove from heat and stir in the toasted almonds. If using, sprinkle with Parmesan cheese and fresh herbs.

  7. Serve warm or at room temperature.
