- 2 tbsp mayonnaise (or vegan mayo)
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce (optional for vegans)
- 1 tsp Old Bay seasoning (or similar seafood seasoning)
- 1 tbsp fresh parsley
- 1/2 tsp smoked paprika
- 1 tbsp lemon juice
- Salt and pepper
- 2 tbsp olive oil
For the Fresh Citrus Herb Salad:
- 2 cups rocket leaves
- 1 cup baby spinach leaves
- 1/4 cup fresh parsley
- 1/4 cup fresh mint leaves
- 1/2 cucumber
- 2 radishes
- 1 orange or grapefruit
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
For the Zesty Aioli:
- 1/2 cup mayonnaise (or vegan mayo)
- 1 garlic clove
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper
Method:
For the Lion’s Mane "Crab" Cakes:
- Shred the Lion’s Mane mushrooms into small, crab-like pieces using your hands.
- In a large bowl, combine the shredded mushrooms, breadcrumbs, shallots, egg (or flax egg), mayonnaise, mustard, Worcestershire sauce, Old Bay seasoning, parsley, paprika, lemon juice, salt, and pepper.
- Mix until well-combined, then shape into 6-8 small patties.
- Heat 2 tbsp olive oil in a pan over medium heat. Fry the patties for 3-4 minutes on each side, until golden brown and crispy. Set aside.
For the Fresh Citrus Herb Salad:
- In a large salad bowl, combine the rocket, baby spinach, parsley, mint, cucumber, radishes, and citrus segments.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
For the Zesty Aioli:
- In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until smooth.
- Taste and adjust seasoning if needed.
